It’s Friday, we are back to work with the reopening of our shop and coffee bar. The Covid experience has been a rollercoaster of every emotion under the sun. I know the ride isn’t over but getting back to work and routine feels good. So when a normal work week returns and you need a wind down cocktail to kick off the weekend try my Sparkling wine, gin and pomegranate cocktail.
2 oz. PC Black Label Sparkling Beverage Pomegranate Lemon 1 oz. gin ½ oz. lime juice, freshly squeezed 4 oz. prosecco, chilled Additional lime and sugar, for garnish
I cheated a little by using Presidents Choice Pomegranate and Lemon Soda then I added the gin, a squeeze of fresh lime juice and ice to a cocktail shake. After a good shake pour into a coupe or a lowball glass with a few pomegranate seeds. You can sugar the rim for added glitz.
Sip and relax.

I was recently reminded of something we used to make at summer camp called Bannock, an easy bread recipe that can be made on a fire using the last embers in a frying pan or wrapped around a stick.
