It's getting hot in here. So cool down with our homemade Raspberry Frozen Yoghurt recipe.
In summer, I prefer something refreshing and cooling for my taste buds. My raspberry frozen yoghurt is bound to please young and old alike. It's no churn, it's easy and the best part- it’s packed with goodness too!
Raspberry Frozen Yoghurt
Ingredients:
2 cups raspberries
2 cups Greek Yoghurt Low fat or regular
1/3 cup honey
½ cup caster sugar or Jam sugar
1 tbsp lemon juice
Directions:
1. Wash and place the raspberries in a food processor and blend. Pass the blended raspberries through a fine sieve to remove the seeds.
2. Return the raspberry puree to a clean food processor. Add the sugar, lemon juice, honey and yoghurt. The sugar and yoghurt will dissolve instantly. Blend immediately until thoroughly mixed.
3. Pour the mixture into a baking tin or freezer safe dish. Cover and place in the freezer. Once the raspberry purée begins to freeze, mix at regular intervals to break up the ice crystals.
4. When it resembles the texture of ice cream, it’s ready.

I love how modern yet rustic this tart looks, it's an impressive dessert for any occasion, delicious served warm with a dollop of vanilla ice cream and best of all it's really easy to make. You can replace the fruit and herbs with anything that's in season and voilà!
